Galaxy Cones Under the Stars (Day 3)

Inspired by our day 3 road trip in Alabama after a full day of rockets, rails, and glamping under the stars… we needed a dessert that was fun, fast, and a little out of this world. Enter: Galaxy Cones—a Huntsville-inspired twist on classic s’mores that the boys now request on every camping trip.

Day 3 took us from towering rockets at the U.S. Space & Rocket Center to the fragrant blooms of the Huntsville Botanical Garden, and finally, to our cozy glampsite tucked into the woods of Monte Sano State Park. As the sun set and the campfire flickered, we wrapped up our night with foil-wrapped waffle cones filled to the brim with gooey galactic goodness.

The boys called it “camping candy”—but better.

Whether you’re roasting them over a fire or baking them at home, these sweet little cones are a kid favorite and a memory-maker.

Inspired by Ethan & Oliver’s Alabama road trip adventure in Huntsville, these gooey, fire-roasted waffle cones are a fun twist on classic s’mores. Perfect for campouts, glamping nights, or backyard astronomy fun.

Ingredients

  • 4 waffle cones
  • 1 cup mini marshmallows
  • ½ cup chocolate chips
  • ¼ cup crushed graham crackers
  • Optional: ½ banana (sliced), ¼ cup strawberries (sliced), ¼ cup peanut butter chips, 2 tbsp sprinkles
  • Aluminum foil

Instructions

  1. Fill each waffle cone with mini marshmallows, chocolate chips, and crushed graham crackers.
  2. Add optional toppings like fruit, peanut butter chips, or sprinkles.
  3. Wrap each cone tightly in aluminum foil.
  4. Roast over a campfire for 3–5 minutes, or bake in a 375°F oven for 8 minutes.
  5. Let cool slightly before unwrapping. Enjoy warm and gooey!
