Comfort food at Aunt Jan’s house—with a macaroni cheesy Alabama twist.
Inspired by our second night with my god-mother, Aunt Jan. When we got back home to San Diego, the boys specifically requested we make her macaroni pie!
Custardy, cheesy, and golden on top, it’s not your everyday macaroni and cheese. It’s the kind of dish that gets passed down through generations. Ethan called it “granny mac,” while Oliver just asked if he could eat the whole corner piece.
It’s the kind of meal that fills your belly and your soul. And after days on the road, there was something especially comforting about sitting around a family table, scooping seconds, and swapping stories. This dish is simple to make, reheats like a dream, and can be dressed up with bacon, collards, or a spicy kick. But honestly? It’s pretty perfect as is.

Southern Macaroni Pie

Inspired by Day 11 of Ethan & Oliver Adventures: The Great Alabama Road Trip—this cheesy, custardy Southern classic was served warm at Aunt Jan’s table, where comfort and tradition were baked into every bite. It’s a dish that speaks of hospitality, home, and slowing down after the road.
Ingredients
- 8 oz elbow macaroni
- 2 cups sharp cheddar cheese, shredded
- 1 cup whole milk
- 2 eggs
- 2 tbsp butter
- Salt & pepper to taste
Instructions
- Cook pasta and drain. Preheat oven to 350°F.
- In a bowl, whisk eggs, milk, salt, and pepper.
- Stir in hot pasta, cheese, and butter. Pour into a greased 8x8 baking dish.
- Bake uncovered for 30–35 minutes or until set and golden.

Tip: Serve it with sliced tomatoes, collard greens, or just on its own for a nostalgic, no-fuss supper.
